Drain and rinse the split peas and put them in a large sauce pan with the water, mint and sugar. bring to the boil, cover the saucepan, and simmer very gently for 1-1 1/2 hours or until the peas are tender. Drain well. rub the peas through a sieve (strainer) or work in a food processor until smooth. Add the butter with some salt and pepper and blend evenly. Transfer the mixture to a warmed dish and serve immediately.
